I do enjoy mexican food though. Mostly quesadillas, which are easy to make and especially tasty.
I've made something approaching quesadillas once or twice, but generally it's just cheese on toast with a tortilla instead of the toast and frying rather than grilling. This is possibly not very authentic, but we don't have any real Mexican food in the UK (case in point: The only place I've ever found burritos for sale is a van which goes around music festivals.)

Honestly, though, quesadilla isn't a well-defined term. Depending on who you ask, the only things all quesadillas have in common are a form of Mexican flatbread and a kind of (generally Mexican) cheese.
Personally, I prefer wheat tortillas, fresh diced white cheese (mozzarella works in a pinch), and a pinch of whatever spices I'm feeling at the time. Then pan sear the tortilla with the cheese, let the oil from the melting cheese do a little bit of frying as I fold the tortilla over, then serve with salsa dribbled on top.

That's what happens when a handful of competing colonizing powers attempt to categorize the foods of a native population with very little attention paid to the various native culinary traditions even as those traditions are being shaped and changed by those of the invading powers and a massive influx of exotic, never before seen ingredients.
