Well, salmon is not salmon, when speaking in terms of where it was caught. To be honest I don't have much experience with canned.
When I was a kid my dad would make something he called poor man's crab cakes with canned salmon. It was pretty tasty all things considered. Unfortunately, I don't have a recipe for you.

Salad: dark greens, praline pecans, canned salmon, olive oil, pepper, maybe some salt.
Pasta: cook some pasta, add capers, olive oil, canned salmon.
Loxesque: Toast a bagel, cover in cream cheese, canned salmon. Capers and/or onions if you like 'em.

18 oz salmon
11 oz corn
1.5 cups of saltines crushed
2 large eggs
1 egg white
.5 cup onion
mix all together for salmon burgers
6 oz salmon
.5 cup chive/onion cream cheese
1 cup bell pepper
1 onion
tsp black pepper
mix all together and put on tortillas for salmwiches
