I need to convert .flac files to mp3s on my Mac. What's the best program for doing so?

If you are converting it for your iPod, or any other Apple device, don't convert to mp3. Convert to aac. It's a better compression algorithm, so you will get higher quality at the same bit-rate when compared to mp3.
You may also want to look into Apple Lossless, if you are into that sort of thing.
Ha, I just did this! The best tool for the job is Max. It'll convert from .flac to whatever format you want, giving you the encoding options and more, and, most importantly, retains id3 and other metadata associted with the file.
You just set the prefs, point it at a folder or file, set the output, and voila.
