I bet they toyed around with leaving you in first person, but my guess is it's confusing and there's a lot of clipping into the models and scenery. It would be immersion breaking even more to have a smoker try and hang you from a roof to have your camera clip through the wall of a building and see all that weirdness.

As much as I loved TF2, I can only handle the multiplayer pace for so long before I need to to go play something else that is more strategic and less frantic. Then my away time just causes me to fall further and further behind the skill curve until 2 weeks after the game launches I am no longer competitive and find the game more frustrating than fun, with the enemies killing me really fast, and my allies bitching at me because I don't have all the maps memorized, heck I have usually not even SEEN all the maps at the 2 week mark.
So I quit the games and wish I never bought them... If there was even a way to hone my skills in a single player environment it would be better for me, but these games rarely have that.
I dunno man, traps are a good idea. Especially if randomized.
There ARE traps, its called a smoker or hunter pouncing on you when you're trying to help a team mate up.
Your team mates have been downed some distance from the saveroom, you're the only one that made it inside. In view, you can see one of them struggling, calling for help. It seems quiet, nothing's happening, no music's playing, you can't hear any monsters.
When you consider going out there to help your friend, remember kids:

Two gameplay modes:
Campaign, in which you and 3 players or bots go through 4 "movies" with 5 levels each.
Versus, in which the boss infected are played by other players and I think 3 movies are available.
Oh dear god that was the best race ever. Roland, Butterfly, Gumpy and myself. It was all a blur. There was a Tank that pushed two of us back ALL the way to safe room. There was me getting so overwhelmed I actually revived Gumpy so he could help, and then repayed a similiar favor to Butterfly.
So I'm the first one in the minigun room after the massive, frantic, clearout of it. I hit the switch, back into a corner, and toss a molotov. Apparently the others die in the ensuing chaos, with me going for the door when I think its safe. It wasn't safe. It wasn't even all the way open, so I'm sitting there, ducking, and waiting. There are zombies coming from all sides now. A boomer flanks me, and pukes on me. I begin to cry. The door opens right as I can see large blurs coming from all sides, so I back up and run like hell through the zombies upstairs. I kill all of them infront of me, and I hear a hunter behind me.
But I made it. With 6 health. And boomer puke still coating my screen.

The point of the game is Co-op play, so the "frantic" element you speak of when talking about most multiplayer games is gone. The versus mode is really kinda tacked on (but well done) and not present at all in the demo. The bots in this game are excellent, and that is what the single player version is...bots + you. However that's a good thing because people can drop in and out of games, and the bots will take over for them.
If you haven't tried Steam in a while, give it a go. It's a lot better than it used to be, and the community features have made it an outstanding way to find people to play games with.
