This article is a relatively long feature that's a joy to read. I usually don't read entire features on the internet like this (I still dig on the print, fellas) but this is pretty damn great. Interesting information, despite being published a while back.
How do you guys feel about this whole food jumbo-sizing and all that sort of stuff?
One part I noticed is that they focus on increasing turkey breast size 'because American's typically prefer white meat.' Dudes white meat is okay, but it's dry and not nearly as flavorful as dark meat. Come on Americans.
Also, there's a stand down the street from my apartment that sells 'Big ass turkey legs' and they're about the size of my forearm...
If you think that white meat is dry and had no flavour, well you are mistaken, or you have just been eating badly prepared turkeys.
My Grandmother makes 25-29 lb turkeys like twice a year, x mas and thanksgiving, and her white meat is never dry, and it has all the flavour you could think of, but she does know how to cook it, and that is breast side down, so that way, the white meat will absorb all the flavors, and not be dry and tasteless.
