How can I create groups from my friends list like work, school, family and professional? So that when I want to show personal folders only friends and family will be able to see them?

As far as creating lists goes, click on "friends" at the top of the page (in between "profile" and "inbox"). In the bottom of the column on the left you'll see a section called Lists, and at the bottom of that there's a "create" button. From there you can add people to the list and name it whatever you want.
Then when you edit privacy settings, either for your entire profile or specific photo albums, you can type in the names of your lists to limit who can see your stuff.
edit: I swear, this method worked 15 minutes ago, but it has suddenly disappeared for me. It appears the new way is to click on that friends button at the top, then click on "friends" under the lists column. A "create new list" button should appear on the page; click on that.
Also, to limit specific photo albums, click on "edit photos" from within a particular album, then the "edit info" tab, then under privacy bring the drop-down menu to "Customize..." and choose "Some Friends" which will let you put in the names of friends or a list that you made.
