Even if the difference in muscle mass between them was solely the result of a difference in meat consumption (and it absolutely isn't), the potential to develop as much muscle mass as the latter fellow is hardly relevant to anyone with no personal interest in bodybuilding, much less developing their body to such freakish proportions.

We've already been over this: power lifting is a hobby. Why do we feel impelled to maximize anyone's ability to lift the heaviest shit? Or to get their muscles that much more bulge-y? Is this something we are going to design social policy around? Is this something which is a serious moral consideration?
I was just useing it as an example to show that whilst there may be vegan "bodyduilders", the guys who are out there winning Mr Olympia are not them.
I was surprised to see Bill Pearl on the list of vegetarian athletes as a Mr Universe title holder, only to read that he didn't give up meat until he was 39 and even then still eats eggs and milk, so that list is a little more than suspect.

He's vegan. Apparently it does take a lot of managing what you eat to still be able to maintain weight as a vegan, but it's definitely doable.

When I consider the ethical value of vegetarianism, or the environmental impact of modern agriculture, rarely do I find myself preoccupied with the dire consequences humanity would face were our professional athletes to be lighter.

You don't actually watch UFC do you? Mac Danzig, TUF season 6 winner is a vegan. Personally I think he fights guys with too little experience but he does have a good record and is a successful UFC fighter.
I think for most of us giving up meat entirely wouldn't exactly be the best solution but cutting down our intake of it would definatly help with the environment and our health.
Honestly for me, eating less meat was just a natural consequence of eating healthier. Once portions went down and I was eating more plant stuff to get all the appropriate nutrients there was just less room in my diet for animal corpses. I still probably eat too much, but I like to think I'm ahead of the American curve on it.

You know, maybe... just maybe... if we ended corn and beef subsidies, the price of beef would rise to a level appropriate for (1) the environmental impact and (2) the impact of eating large quantities of beef on human health.

One of the biggest things being missed in this thread is that industrialised Ag in the US is quite different to just about anywhere else due both to cultural factors and the effect of their farm subsidies. The meat products produced in the US by those methods are unhealthy, crap quality, and rely on both treating animals very poorly and utterly destroying the environment surrounding the production facilities. THe knock-on effects include a number of direct threats to human health en masse, including dietary problems, environmental quality problems, and the generation of new and interesting diseases.
