I think they're still working on that. They aren't just painting these statues, they're painstakingly extracting paint particles from within the marble so that they get the colors exactly right, which is a slow process without destroying the statue. I'm not entirely sure how they do it.
Also, say what you will about Caligula, but this is awesome.

and of course the findings at Pompeii and Herculaneum showed huge amounts of colour too. When I walked about Pompeii a couple of months ago there was a lot of colour visible
