How would one get different cuts of meat from said meat-cube? I can't wrap my head around this concept without having an animal's biology go with it.
I'm not a bioengineer, so I don't know the specifics, but I know they can use a sort of "scaffolding" on which the cells being grown attach to, which dictate how they grow and connect to each other. Just set up a latticework cow's-ass and trick the cells into forming the proper musculature and whatnot.

well they're starting with stem cells that they then influence via hormones and other environmental factors that they control to grow into muscle tissue
different cuts (unless you're talking about organ meats) are all muscle tissue, just muscle from different regions that have different qualities based on what the muscles need to do
so theoretically they should be able to find a way to stimulate the muscle tissue to grow in a way to mimic the type of muscle tissue they want, say chicken breast versus chicken thigh
