I'm looking to build up my iTunes library a bit more, so I need some bands or solo artists.
The stuff I like is, like in the title, soft acoustic stuff in the vein of Joshua Radin and Howie Day. But I also like the BRMC (Black Rebel Motorcycle Club) and the Fratellis, as well as stuff like johnny Cash and Otis Taylor.
what about stuff like Aerial M's eponymous album, and Papa M's "Live from a Shark Cage" album? Pajo's next two albums have singing, too, if you're into that.

I second the Sondra Lerche. Great guy as well. I met him at an in-store he did at a record store I used to work at.
And you should listen to the Rural Alberta Advantage. They're generally more up tempo, but not rock. And they're awesome anyway, so it shouldn't matter.

And... I should probably link to some of his concerts where he just plays it all acoustic- those are rad. Maybe tomorrow.

I'm pretty sure Jim Guthrie uses an electric cello and violin (courtesy of Own Pallett) in a few songs off of Now, More Than Ever. Good luck finding it though. It's a really good album, too.
Speaking of Owen Pallett, Final Fantasy's got all kinds of spiffy violins and shit going on. You might also try Belle Orchestre, though they're not exactly relaxing most of the time.
And speaking of Joanna Newsom, you might also try her stuff, especially from Ys. Be warned though: it's like a coin flip on whether you will love her voice for being unique and beautiful or hate it for being shrill and childlike.
