Any recommendations on which websites or books I should get on learning how to cook authentic Japanese cuisine ? I've been smitten recently by Bentos and am looking for a home cooking type of style. Most of the google search results seem questionable at best.
I have been on a japanese cooking kick for about a year now. I still have to really find a great traditional (basics) japanese cookbook but I do have one that has a good explaination on key ingredients some basic recipes and other japanese food related things
Its called "The Japanese Kitchen" by Kimiko Barber
It breaks things down by ingredient then has a couple recipes using that ingredient
Each section has information specific to that ingredient,
the sections on fish (like Benito) explains the fishes Habitiant Appearance and Taste, how to buy and store , health benefits, culinary uses.
I recommend it for understanding what is used in Japanese cooking.
I still need to get a good Mochi recipe.
Oh and for something light but informative, check out the manga Oishinbo. It is being released here in a "a la carte" format, each book focusing on a specific topic like Fish, Vegetables, Sake, Gyoza etc. Each book has a couple recipes in it from the story and it has helpful tips on food and the state of Japanese cuisine at the time.
