Don't know if this should be in H/A or not, but as it relates to games i'll place it here.
As it has been out for a while now, what are the 'best of the best' that should be bought on purchase?
Ideally fun 2 player games as it is a joint purchase, but also for my sanity (my partner is already looking at games like 'cats' - which, whilst i'm glad to get her gaming, is not quite my forte) is there anything with decent characters and a bit of complexity/ good story as well as a good game?

If you like shooters(like Galaga, Ikaruga, etc.), Castle (of) Shikigami 3 is fun two-player madness. It's also got a fairly convoluted story if you can figure it out, and the cast is certainly unique.
If you're looking for 2 players, especially for a GF, look at "Super Swing Golf/Pangya 2" . Make sure you get the second one, as the first has controls that are fairly user-hostile.
New super mario bros. is coming out next month and looks to be a fantastic co-op game. Mario Kart is also a good 2 player game. Resident Evil: Umbrella Chronicles and the soon to be released RE: Darkside Chronicles are decent co-op lightgun type games. Then there's always WiiSports Resort. I've heard good things about Boom Blox although I haven't played it myself.
As for singleplayer, Metroid Prime Trilogy is a must. Madworld can be found cheap and is a lot of fun although some didn't like it. Mario Galaxy is also a very good game that has something for a second player to do. Zack and Wiki is a very good point and click type adventure game. The Silent Hill remake coming out sometime this holiday season looks solid, but it keeps playing musical chairs with its release date.

Thanks... Other important question as the Wii seems like the sort of thing that will f*** you on the accessories. Is there anything you need or is highly recommended that you need on startup? (Remote charger, nunchuk etc.) Or does everything you need pretty much come in any decent wii bundle.

I like the Nyko Wii Charger. Also another nunchuck just to be sure.
Oh pants! And internets. We have no phoneline set up (i'm using a mobile dongle for the internet on pc) - Is this important? If we need internet could we just take it to someones house who has a phoneline etc..

Single - Super Mario Galaxy, Metroid Prime Trilogy, De Blob, Super Paper Mario
Boom Blox Bash Party is strongly recommended... along with an elbow brace. Trust me on that one.

I just picked up a Wii today and the two first games I bought was Wii Sports Resort and Tiger Woods 10. The latter is by far the best golf game I have ever played, and I played Links 386. Alot.
I'd highly recommend Wario Ware Smooth Moves, and tell you to play it single player and trade off with your girl (or within a group). It's a silly fun that'll get people moving and having a good time. If you were going to pick up Wii Fit on it's own merits, its 'games' can be handled the same way, but the buy-in for just that isn't worth it.
Boom Blox, Mario Kart Wii, Wii Sports Resort and the pack-in Sports are also easy-to-get into games.
None of those have story modes, however.

I think universal must-haves are Mario Galaxy, Mario Kart Wii and Wii Play, if only for the second remote and then an extra $10 for Tanks and Laser Pong. And New SMB Wii dropping next month, definitely. And don't discount Wii Sports, which my wife and I played for ages at launch. Wii Sports Resort is excellent as well, though it'll require more investment since you really need a second MotionPlus for the game to shine.
Since you're brand new to the library, if you're in the U.S. you should definitely hit up Toys R Us's sale this week: Buy two games, get any third game free.

Did they fix the multi player camera in the sequel? In the original you either played as player one or you got good at fighting off screen.
Anyway more on topic, i would definitely recommend either Super Smash Brothers or Wario Ware if you're looking for looking for good multi player games.
The best way to solve the ToS camera issue is to make player one Raine/An offensive caster. Every multiplayer game since ToA though has had a decent enough camera to work with without resorting to such means.

It's totally over the top on the violence, kills are really rewarding, the challenges provide great breaks in the slaughter for even more slaughter (but on a mass scale), and the bosses provide a decent enough challenge with hilarious final blows. Levels have objectives to them that unlock the challenges and rewards in the form of weapons, health pickups, and extra lives. There's definitely an underlying sense of humor to the action. It's really cheap now. Last I saw it was retailing for $30, but it may even be cheaper now.
RE4 is also a great choice. The Wii version was the first time I'd played the game, and I walked away from it very satisfied. The controls are spot on. It's another cheap one (I think it retails for $20 now). No More Heroes was also fun (never got around to finishing it though), and it sells in a bundle with Red Steel now for $30.

I'm going to be the obligatory killjoy here and recommend against getting MadWorld. The controls are sloppy, the scoring system is terrible and worst of all is the fact there is grinding in it. Now admittedly grinding isn't a deal breaker on its own, but when you factor in a length of three and a half hours from start to finish it really leaves a bad taste in your mouth. I agree with your other recommendations though.

No More Heroes is a must buy. Arguably the greatest under-the-radar hit the system will probably ever have.
All three Sega light-gun shooters are solid choices, especially if you are looking for multiplayer.
Ghost Squad is the shortest by far, but probably the most replayable due to you being able to unlock up to 16 different variations (with different paths) of each level. It's also the easiest out of the bunch. You can probably find it cheaper than the other two.
House of the Dead 2+3 is the hardest. Though it's technically shorter than Overkill, it'll probably take longer to finish both games, as it actually forces arcade-style credits on you, thus meaning you have to start all over when you lose. HotD2 in particular has a nice amount of replayability through the Original mode.
House of the Dead: Overkill is the best of the bunch in terms of quality. A single playthrough in the story mode is easily longer than anything else in the other two games. I also think that a single level in Directors Cut is probably almost as long as a single playthrough of Ghost Squad. Out of the bunch, it's the only one that was made originally as a console game, and thus it doesn't have the arcade difficulty that the others have.
After playing a bit of the new A Boy and His Blob, I'd have to say you might want to look into it. Not only is it a clever puzzle/platformer (one that gets really challenging from the reviews I've read), it's also a great showcase of traditional hand-drawn animation. Plus it's the only game I know that has a hug button. A hug button for crying out loud!
MadWorld is one of those "your mileage may vary" titles - the style is cool and the offbeat sense of humor is great (if you can appreciate it), but after a while the gameplay gets a little stale. House of the Dead: Overkill is awesome; so is Resident Evil: The Umbrella Chronicles (and Darkside Chronicles by the looks of it). No More Heroes needs to be played in order to be fully appreciated - just trying to talk about it doesn't do it justice.

But if you want story driven two player you really can't beat Tales of Symphonia: Dawn of the New World.
