Honestly, the most fun I have had while in Vegas, was walking around watching people gamble. Its actually a lot of fun. Go at night, when people are in their cups, and it is a blast.
Where are you staying? On/off strip?
Shows can be expensive, but there are places on the strip (one I know of, right by the mall towards the end of the strip) that sell tickets fairly cheap for shows that are happening in about an hour. If you don't really care what you see, you can check that out. (That said, for the love of God, don't see Cris Angel. He's a hack, and everyone I know who has seen him says he sucks.)
The Treasure Island casino has a show daily with pirates and stuff, thats always fun, and Caeser's has the fountain show that everyone should see at least once. Also at Caesar's is a kick ass aquarium with crazy fish in it.
Also, by the Golden Nugget (I think it's on Freemont St., but don't quote me on that) there is a crazy street that has a light/video show above it, playing on a screen thingie. Its awesome to watch.
Other than that, I would say people watching. It is absolutly nuts to watch people gamble large sums of money.
We're staying at Planet Hollywood, but we've got a car too. Planning on going to the Hoover Dam at some point.
We have been to Vegas before. Just never for so long. I will say that we have seen Blue Man Group and Zoomanity before. Really liked Blue Man but it's so expensive.
My wife really likes Holly Madison and I guess she is in Peep Show in the Planet Hollywood. Anybody know if that is any fun?

+The screen thingie you speak of is called The Fremont Street Experience.
I would really recommend checking out Red Rock (not the casino). Its a few miles outside of Vegas...just head west on Charleston and you'll see it after a couple of minutes. Its a fantastic place to hike and explore.
I need to throw a vote in for Phantom of the Opera at the Venetian. Unless you have/will see it in NYC or San Fransisco it's well worth the price of admission.
Edit: just read the not too expensive qualifier. Uhh, pricing for Phantom is comparable to a lot of shows, but it's nothing I would call cheap.
