Program to Backup Only Files Modified in Last X Days?

Like the title says, I need something that can backup everything that's changed on my friend's laptop since Sunday. Suggestions are very much appreciated.

edit: Specifically, if I could take the 100 or so spreadsheets and documents from the 'recently modified' search results, and copy them to a flash drive with the folder structure intact, that would be awesome.
