So my wife and I play on Live with another married couple whenever we can. What we are looking for is something casual (boards, cards) that is fun and supports four people playing on only two consoles. Is this possible with Uno? For good lighthearted fun what should we be looking at?
You're going to have a tough time finding anything, as 2vs2 online isn't a very prominent option.
I know Uno doesn't support it, neither does Catan. Carsconne might. Other suggestions would be Bomberman, Worms and Castle Crashers. All of them have demos so you can see if they have the multiplayer support you need.
Okay one more question- Tiger Woods 09 says it supports 4 player online. Anyone know if that can be utilised with 4 people/2 systems? In other words all four of us get to hang out and play golf together using just the two X-boxes. If it matters, we all have gold memberships. Some games do (left 4 dead) while other don't and it can get pretty confusing.

I Made a Game with Zombies In It has 4 player coop, and is good for a bit of fun, not really casual though. (Indie game)
