The marvel films tend to follow a pattern where the second of a series is much better than the first, then they destroy everything that could possibly make the movie good for the third installment.

Which movies beyond the spider-man trilogy have they done this with?

That has actually been the format for every superhero franchise ever

i understand your concern
but iron man is the first marvel movie series totally produced "in-house" as it were.

spider-man was sony and x-men was fox i believe.
This.
Marvel has complete control now. And Iron Man is really the front runner for the whole franchise of Avenger movies they want to do, so they can't afford to screw it up or piss off the fanbase.

Whiplash has a pretty awesome line in this. He's actually looking like a really interesting villain, which is something I'd like to see more in movies.
I mean, (Iron Man spoiler)
Jeff Bridges was a cool actor, but as villain his motivations and ultimate plot were pretty generic. Not really a bad thing, since he didn't need to be anything, but it'll still be great to see an enemy with something more.

My only concern with this is that it suffers from the Spider-Man 3 problem of too much shit going on. I mean, that's a lot of characters. But the first one was pretty well done so I'll hold onto hope That new trailer just looks badass.

But it was true to the character
In the comics Stane is little more than a power hungry control freak, that never even thinks of losing as an option. He's a fairly one dimensional character, which for a first movie worked. And edit, to be fair the Whiplash character in this movie is really two villains combined, Whiplash and Crimson Dynamo.

Very doubtful. Favreau has shown to be (thankfully) nothing like Raimi has been to the source material.
