Do you have anything against icecream in the park or going for coffee in the afternoon? That might make the transition a little easier, since either activity can be brief or long, depending on how it's going, and transition to dinner if things go really well. You also don't have to worry about spending money on museum admissions and then discovering half way through the first exhibit that things aren't going to work out.

walk around soho and check out the galleries there... i almost guarantee that you haven't seen all of them before since they change so often

Good ideas. The idea of just walking around in the park or something in the afternoon sounds like a good idea, I'll see whats going on in Chelsea as well.
Why don't you head down to Chelsea Market, and grab some tasty Thai food? If you've never been there, it's this really awesome indoor market, with a WONDERFUL and fun atmosphere, with some of the best bakeries, cafes and restaurants I've ever tried. It's incredibly close to the chelsea galleries, and the Highline (beautiful!)
