Well, the Civ games usually don't mind resolution changing. However, most 2D games don't let you do this, simply because at 1080p, the graphics will either be a stretched, pixelated mess, or will be zoomed out to the point of unplayability. However, DOSBox has some scalers and such that let you run DOS games at higher resolutions, though they might become more blurry and CPU intensive.
Ultima 7 with the fan engine. Crank up the resolution to whatever you want, abuse the fact that some things work "as far as you can see" to hilarious effect.

Diablo II (no multiplayer of course)
Fallout I & II
Icewind Dale I & II
Planescape Torment
Red Alert 2
The Sims (not sure how well this works)

Total Annihilation & Kingdoms

All 2D games that look amazing at higher resolutions (well Total Annihilation isn't entirely 2D). StarCraft (again no multiplayer) also has a patch but last time I tried the sound positioning was broken with awful results. I would expect someone to figure out Star Wars: Galactic Battlegrounds at some point, hasn't happened yet though, wonder why.
