I've pretty much enjoyed each Gothic game more than the last (with the requisite patches, of course). 3 is currently my favorite. I haven't played Risen, so I can't comment on it.
I don't believe it was horrible, it just looks horrible. They removed a lot of the grass and foliage and the textures look all blurry and shitty. Here are some side by side comparison shots.

In two different computers I have found no way whatsoever to get my Steam copy of Two Worlds to function. The first computer produced game-ending graphical errors that turned the screen to garbage. The second it just will not run.
3 could have very easily trumped the entire series, but it becomes pretty obvious once you get a bit far north or south, that they just ran out of time. You stop finding unique encounters, stop getting permanent stat plants, stop finding treasure, the world just runs to empty. PB just ran out of time.
I'm trying to get into Gothic 3, there are just too many bugs and weird things that happen all the time. I was in an arena fight the other night, my guy takes one step outside the barrier, they call me the loser and the whole camp attacks me AND take my gold and weapon. Animals are deadly with their constant backing up to dodge your attack only to strike and land multiple hits on you until you are dead. The death scream and ragdoll of the character make me chuckle. I just don't get a lot of things that are going on. You help some guy out by killing some bad ass monsters and all he offers is to train you in hunting? 20 other people do that for nothing. Everyone treats you like shit and that's fine because if I went up to everyone flailing my arms when I spoke asking "What are YOUUUUU doing here?" I would expect the same.

Edit: Holy shit. The patch is nearly a gig in size. There are also thousands of fixes, apparently. The community patch also had help from developers and even had its own beta tests for each release.

I quit today because I was getting frustrated in the New Mine. I have to climb down a ladder while being shot with crossbows by 2 guys. Having a separate arrow resistance sucks.
Made it to Chapter 5. This minecrawler armor looks wacky. I've finally been able to invest in strength, now that I've got enough points socked away for the sixth circle. My weapons will work once more!
I haven't tried the community patch, I might have to give it a shot. I hope it fixes combat as that has turned into me just flailing my sword in somethings face waiting for them to walk into it. I guess I enjoy the game so far, it's just so damn weird.
I'm about to install Gothic 3 and hopefully beat it this time. I also hope the community patch really does make it more stable. Vanilla ran like utter shit.

Gothic 3 doesn't even want to install. Every time I get to compiledMesh.pak, I get a data error (cyclic redundancy check).
Edit: I got it to install by restarting my PC. The disc was clean, so I don't know what was up with that error. Now to install the 1GB community patch.

Oh, it still runs like shit, but it never crashed on me that I can remember.
Gothic 1 and 2 are really, really great games, with some bugs and some age but a lot of charm and good gameplay.
The key to survival in both, absolutely at first and often later on, is to avoid the fights you can't win. Most animals can overpower you at level 1, and most humanoids can beat you easily at later levels. Even once you're midway up the levels, you still can't take on 3+ orcs at once, and the one guy you thought was alone will end up calling in five reinforcements. That said, going off of the beaten path, while usually fatal, also can occasionally yield some truly excellent advantages. I remember once, at around level 5 or so, I decided I was just going to explore as much as I could without getting killed. I snuck around an orc patrol, hit under the shadow of an abandoned mage tower, ran into my first ever sighting of those velociraptor things, and finally had begun climbing my way down a mountain path toward the sea when I found a skeleton holding a badass looking axe. I picked it up, got jumped by two other skeletons, ran the fuck away, nearly got killed by the returning orc patrol, made it back into the city and watched as the guards drove off the orcs. It turns out that I couldn't use the axe for two more levels, but once there I became a mini-god for a while because it had boosted my attack so much beyond the typical weapon for where I was.
Having no mouse in Gothic 1 is difficult to get used to, but it can be overcome. Until you become familiar with the combat system, everything is going to feel clunky and awkward - which actually makes sense, because your character starts out terrible with a sword. However, as you learn the precise rhythm of attacks and blocks, your character likewise progresses in speed and skill with the sword. You both hit the point of mastery at approximately the same time, which was a very pleasant surprise when I first played it, and is something no other game I know of has captured.
The first time I played, I joined the pot-smoking tribe. I don't remember what they were called, but it wasn't the Fire or the Water mages.
Sounds like Gothic 2's classes/guilds are a little more restrictive. I think I'll go for the pure combat Mercenary route. Magic was kind of a letdown in Gothic. I felt like I was always gimping myself by saving LPs for learning magic, when it was never terribly effective.

My advice is to kill things with a bow for Gothic 2. Spell casting is improved and there are some 'end of the world' spells you can use to clear rooms and kill dragons but you've already played a mage. Try being Robin Hood. Live off the land, skin animals, pew pew arrows, sneak around in town and rob everyone blind while they sleep, etc.

Use the unofficial patch for bug fixes. Avoid its "rebalancing" like the fucking plague.

I played the hell out of Gothic 2 back in the day. I remember waiting a couple of years desperately hoping for Night of the Raven to get translated into english after finding out about it. I stopped paying attention for awhile and they finally released the gold edition, which I bought but never really got around to finishing. I want to try all of the sweet expansion stuff, but I'm not sure if I can deal with starting all over again. It's great going from 0 to fuckawesome, but after doing it twice (second time with a mage, man do they get fuckawesome) it's hard to talk myself up again.
Shame that 1 is so hard to get working properly/has horrible keyboard combat, and 3 is mostly meh.
Do they really get awesome? In Gothic 1 I tried being a mage, and it sucked. All the spells had long cast times so it was "Cast 1-2 times, then melee anyways." And the last 2 "special" spells were utterly underwhelming, despite the fact that I had to give away by uberweapon to get them.
Being a Mage in Gothic II with Night of the Raven sucks horribly though, since enemies get a major HP boost while the spells didn't really get any improvement.
I think I might be a little bit stuck in Khorinis. I'm out of easy XP and money, but Lares won't escort me to the inn or farm or whatever until someone replaces him or does something about the disappearances.

Dropped this for a bit due to picking up Mass Effect 1/2 again. Played a little today.
Managed to kill my 6 wolves and get some skins. Now I can go uptown! I haven't yet, trying to polish off a few more quests.
LPs feel a lot more precious this game. I think Gothic 1 had faster leveling overall. I've been playing for quite a while, and I only just hit level 5. I've sunk all my points into strength, skinning, and 1 handed combat. I still feel pretty gimpy.
I did follow Lares' advice and use Sleep on a guard so I could nab some free leather armor. That helped a lot. I've got enough gold to get a new sword now, I think I'll blow most of my cash on it.

It sucks being relegated back to being a punk. I wish I were at least playing a different character, so I didn't feel like a total bitch.
