Questions about patching Planescape: Torment

Okay, so I've got the 4-disc version, (cds, how retro) patched to 1.1.
I've done some reading and it seems that like Fallout, black isle released a totally awesome but quite buggy game.
I've looked a bit and the updates I can find are:
- The 1.37 patch
- The 1.38 patch
- The Ultimate fixpack
- The restoration pack
- PST Unfinished business
- PST Quinn's Tweaks
Now, I understand that these work by overwriting files in the \override folder in my installation folder.
My worry is that if I do them in the wrong one, or in the wrong order, I'm going to make the game unplayable.
Anyone have any experience with this?
