Win 7: Standby/Hibernate, unless something is running.
I have a Win 7 machine. Using a Kill-A-Watt device, I found out it costs me $21/month for the electricity to run this setup. (Networking gear + PC + 360 + PS3) It costs that much because I keep my PC on ALL the time because I can't get Windows to NOT standby/hibernate when I'm doing video encoding, rendering, or downloading torrents or from usenet.
There has to be some way, some app I can use that will suppress standby/hibernation while there is activity from certain applications.
I couldn't find a way. I had to turn off automatic sleep and remember to put the machine to sleep when I'm done for the day.. there's an option you can configure somewhere that will make 'Sleep' the default option in the start menu.

Suboptimal, but it works.
