Cooking with sunfower and millet flour

Hi, I'm back from East Africa and my souvenirs included sunflower flour and finger millet flour, and I'm not sure what to do with them. I know that millet flour can be made into porridge or ugali, but I'm not really in the mood for pure, unadulterated starch. I'm pretty sure sunflower flour would be good in pastries, but what do I know? Anyway, I need recipes and advice for converting wheat flour recipes into other flours.

    Try googling them. As for converting it helps to know more about the specifics of the flower. Things such as bleached/unblceached and the protein content.

    Theres a couple recipes I found with a quick search. You are pretty much going to have to compare the flour(protein and bleached or unbleached) with other flours and find a recipe that has something similar and simply substitute it directly.

    If its another flour that has a different protein level you wont necessarily be able to add more/less to compensate. So be careful.
