So I lost count at some point, but I've had about 30-40 eight ounce cups of coffee this week, since Monday. That's with four creamers and four sugars each.
If I stop drinking coffee for more than a day (and sometimes less), I get a terrible headache, as if the gods are screaming angrily from within my brain.
I don't want to get diabetes. I stopped drinking soda last year (I could drink three to four liters a day) at the beginning of last year. But...I dunno. Getting through a work day without pouring hot warm caffienated liquid down my throat amost every half hour to an hour is tough.

You are getting at least 800mg of caffeine a day with that regimen. Probably a lot more. An amount over 300mg or so will create a dependency and that is why you get the headaches. Your blood vessels are constricted without the caffeine.
You can try setting yourself some guidelines and easing down on how much you consume. Coffee by itself is very low calorie, but you are basically drinking a soda (or worse, I dunno) by adding 4 cream + 4 sugar, so you're not doing yourself any favors.
One tip is drink a glass of water before you let yourself drink a cup of coffee. That'll slow you down.
2 options:
1. Suck it up. Caffeine headaches blow, but they only last 2-3 days.
2. Tail down. Given your intake, start with 1 coffee in the morning, 1 in the afternoon. Then either stay there or move to just 1 a day. Either is a relatively healthy intake. Oh, and cut out the sugars and cream, if possible.
You can take either of schuss's plans to moderate to good success. I have the same issue and have been able to get rid of my physical dependency successfully using both methods (at different times).
I always come back to coffee due to my habitual dependency, though. In my experience, the physical dependency develops quicker if you've already had issues with it.
The main problem is that coffee is delicious. I've been off for a month and a half this time, but I know I'll be back. I quit coffee for 2 weeks to a month every 6 months or so to prevent escalating dependency/effectiveness issues.
Switching to black coffee will help you kick it! If you can't stand the taste without creamer, you'll drink less of it, and it's easier to not put sugar in than it is to not drink coffee at all.
Also, try 8 hours of sleep at night... this will help as you're ratcheting back the addiction.
One to two cups of coffee per day is good for you. Try to cut down to that, and switch to black, dammit!
If you don't think you can drink it black, try buying better, lighter coffee.

My girlfriend has heartburn issues, so we get a mild breakfast blend, and they are usually very smooth. I take mine black during the week, and reserve creamers for the weekends to reduce my intake of delicious sugary sweetness.
You can also add honey to coffee. You will either love it or hate it. I drink a Honey and Cinnamon coffee sometimes, and it is AWESOME. Good way to replace the sweet with something a little better for you.
I also cut the Soda out of my life about a year ago. First I drank sweet tea to slowly wean myself from the carbonation. Then I switched from sweet tea to just regular tea.
OP if you can't switch directly to black coffee, definitely try the gradual approach. Cut slowly back so your body gets used to it and does not freak out. Also, try alternating with water, so drink a sip of coffee, then when you would take another drink of coffee, take a big sip of water. This will help cut down your overall consumption at the same time, and keep you hydrated.

If you have trouble cutting back due to headaches, I recommend taking some Excedrin Tension Headache pills. They have caffeine in them so it helps withdrawal pains a bit.
Either drink a glass of water in between cups or a cup of decaf. Don't just say "I'm going to drink less." that stuff never works.

'trying to cut down' is an invitation to failure. My advice (from a friend who did something similar) is force yourself to only drink black. You'll enjoy it less and when your coffee doesn't taste like taffy you won't want to be sipping at it all day. Buut at least your headaches won't be so bad.
Me, I think you just need to go cold turkey. Coffee withdrawal is the least worst type of withdrawal, and if you just get some headache tablets you can probably whiz through it.

He needs to drink something to replace it. The headaches are one thing. The mechanical act of drinking while at work is even worse. It's a habit. And habits are the hardest to break.
Sounds stupid, but drink the water out of whatever thing you are used to holding. If the coffee was in a mug, do a mug, if you bought the coffee, get one of those yuppie ceramic cups styled after the paper cups.
For what ever reason I will drink a crap ton of water if I get to drink it through a straw. It helped me kick my soda habit to get an insulated starbucks cup shaped like their clear ice coffee cups. I donno why the straw was magic. But trust me, after a few days, you'll be thirsty and water will taste fucking delicious. I also destroy OJ now.

If you need something hot and sweet and a little different, try black tea cut with a little milk. Tried it just recently, tastes good.
Slowly make more and more of your coffees decaf; you won't get the caffeine but you get the coffee taste and warmth. Not quite the same, but with time you get used to it.
Decrease the sugar, you get used to it too.
If you are gonna go black go for a light roast.
Hope that helps. I was up to 4 or 5 cups a day about a year back and hand to stop because I was shaking so much.
If you need another vice, bring a snack with you to keep your hands and mouth busy. Finger food in small pieces, like sliced apple or nuts.
Switch out every other cup of coffee with decaf, then move to 2/3 cups decaf.

I recommend black coffee as well. The only problem with this is that most black coffee in any work environment sucks. To get good black coffee that needs no sugar or cream, you'll need a couple things:
A good burr grinder: This is essential, and the number one piece of equipment you need. They can be inexpensive ($50) and they can be very expensive ($300). Mine was about $70 and it works just fine, a massive improvement on the regular blade grinder. Then you grind them fresh, daily, as often as you need them. You can also get a hand grinder for much cheaper, probably $25, which works well for travel/work.
A decent French press: Decent meaning it'll keep the chunks of coffee beans out of your coffee to avoid a bitter or gritty flavor. You can definitely get good coffee with a drip machine (burr grinder still essential), but it won't match the quality of a French press.
Then I'd go with what others have said. Drink more water. Lots more water. I used to put in 4 sugars and 4 creamers with my coffee, and now I only drink freshly brewed/ground black coffee. Nothing is better!

You're getting the headaches because you're having caffeine withdrawl. Just suck it up and after two or three days you'll be fine. Basically on a Friday don't drink any coffee and then continue over the weekend without drinking coffee and by Monday you should be fine.
If you want to keep drinking coffee, try to drink it as black as possible. Use milk instead of cream and skim if you can. Don't put sugar in your coffee.

The amount of caffeine a tea contains sorta depends on the variety he switches to, there are plenty with no caffeine if he can get used to the taste of lighter ones.
I cut caffeine off completely. I picked a day to start when I had a couple days off together, and then just went cold turkey. In my experience, weening yourself off something never works. I've seen people quit smoking after decades, and drinking. You stop by stopping.
That said I had 2 very irritable days wherein my girlfriend tells me I didn't talk, but since she was in the know about what's going on she just gave me the days.
Now, after I've kicked the habit, I'm so happy I did. Instead of getting spurts of caffeine induced energy during the day, I have a higher level of energy all day long.
My advice is to just take your days and quit, brother.

And maybe 5 or 6 normal creamers.
But that isn't really drinking coffee, that's drinking sugar and creamer that's tainted...
