For games, Edge is probably the best game on the app store, followed by Canabalt. Tiny Wings is great, too. I also really enjoyed Space Invaders: Infinity Gene, though it's a bit easy. Still, good fun, and it sports a smart aesthetic.
For normal apps, freeappaday is great. Most free apps are shut, but maybe once a month you'll get something really cool for free, and you only need to check it once every couple days.
Dragon Dictation is super convenient. Records your voice as text, allows you to use that text message as a im, or pretty much whatever you want. Time saver.
Groupon is cool, let's you check out their featured coupon in your area. Oh, and while we're on the topic of saving money, see if your bank has an app; my bank allows me to see where the nearest ATMs are to my location, it's saved me from having to use (and pay) rival bank's ATMs many times.
Genius scan is rad, check that one out. Oh, and Hipstamatic, if you want to turn your iPhone into a really decent vintage camera. Fantastic little app, and fairly cheap considering how damn well it works.

You must, must, MUST get Sword & Sworcery EP. It's in my top 10 games on ANY platform. The reviews for it are all stellar. It's a fucking masterpiece. Play it in the dark with the headphones on.
Gorillacam - http://itunes.apple.com/gb/app/gorillacam/id342972390?mt=8 - is free and absolutely brilliant, it adds zoom, timer functions, time lapse photography, antishake, 3 shot burst modes to the Iphone camera. My 3GS is as useful as my digital camera with all these functions.

Calcbot to replace the basic calculator that comes with the iPhone.
The three games I play the most. All of them do asynchronous turns over the intertron, so they're awesome for playing over time with friends. You don't have to sit there waiting for your friend to take their turn, you just play a move when you have the time.
Words With Friends - scrabble clone, the official Hasbro one is lame, ad-supported/$3

Messaging: WhatsApp (closest thing to BB Messenger on the iPhone), Emoji Free (to make emoticons - you can actually use WhatsApp to download this)
