I plan on finally picking up a PS3 in about a month, and putting together a wish list of games I want to eventually get around to buying. Having had a 360 for a while that eventually died on me(As of September 2010) I'm looking at trying the other HD console and its exclusives finally. Since I didn't own one I never really followed PS3 releases however, so I'm sure there is plenty of games out there that I am overlooking through sheer ignorance, so any suggestions would be lovely.
As it stands the games I am interested in off the bat include
ModNation Racers
Gran Turismo 5
MLB 11 The Show
Demon's Souls
Valkyria Chronicles
3D Dot Game Heroes
Little Big Planet 1 & 2
Ninja Gaiden Sigma 1 & 2
Anything about those titles I should know, and/or any suggestions as to similar titles I would enjoy? I'm pretty sure my friend has Uncharted 1 & 2 so those I plan to borrow at some point as well.
I'd say getting both little Big Planet games at this point in time, is a little pointless. Everything except the campaign from the original, is accessible in the sequel. I know that would sound strange for most games, but the meat of the LBP games, is in the community levels. In my opinion any way and every level made for the original is playable in the sequel. But in terms of story, it would be as important to have completed Mario Brothers 3, before playing Super Mario World.
I'm probably alone though on the idea. The first is a great game too and it's maybe better to play the one with less abilities first. As it would be annoying the other way around. But if the main draw to Little Big Planet for you, is the community levels, I'd say skip the first.

Also if you're a fan of platformers. The Ratchet and Clank games for the PS3, are gold.

Demon's Souls and Valkyria Chronicles are must-haves. Both of those are awesome and lengthy games. After beating those you could consider Uncharted 1&2, though you may be better off renting. I really had to force my way to get through them.
On the RPG-side you can take a look at Folklore, but I can't give a recommendation since I've yet to play. Shouldn't be hard to find a cheap copy if you're willing to take a flier on it.
And I'm contractual obligated to mention MAG (even though you didn't list any FPS titles).
-1 vote for the Uncharted games. They are just so, so boring. They do absolutely nothing new or interesting. But then I really love Cross Edge, Star Ocean and Trinity Universe which have less then stellar opinions here.

I enjoyed Uncharted 2, but don't play it back to back with Assasin's Creed 2 or you'll be saying "Why the fuck can't you climb this thing, Drake, Ezio could climb the fuck out of it", and don't play it on Hard, or you'll be in for a long game of hide-and-peek headshotting.
AC2 and Red Dead are fantastic if you haven't xbox'd them yet.
Demon's Souls and Valkyria Chronicles are goddam gems and should be your first gets.

3D Dot Game Heroes is okay. I don't really play it, but I really enjoy having my friends who aren't really gamers and have never played zelda etc, and everything is shiny and new to them. Also making mans if fun, if time consuming.

Heavy Rain - The story is a little incoherent but can definitely pull the ol' heart strings.
Pixel Junk Shooter - Definitely a fun little game. I haven't played 2 yet, but I can vouch for 1 being good.
Non-exclusives
PS3 Portal 2 - the best version of Portal 2 to buy hands down.
There are plenty of other good non-exclusives to play beyond Portal 2 (like the above mentioned Red Dead Redemption) but I can't think of any that are necessarily best played on the PS3.
Try the Valkyria Chronicles demo first, just in case. I think the game is severely overrated around here, mostly because it gets repetitive, and the story/characters are rubbish, unless you really like that brand of anime-ish thing.
It's rather good at first, but doesn't really remain so.
Infamous would be a good addition to your list and, as others have said, LPB2 would be sufficient probably, no need for the first one.

The God of War Triology. At the very least play three, the scope of some of the set pieces rocked my socks!
I'm interested in Demon Soul's but from what I've read the game more-or-less encourages a mechanism that I would normally consider griefing; jumping into another player's game to kill them. Do I have my facts wrong, and if no, how often does it occur?

You won't ever have to do it yourself, and you can limit it from happening to you, or completely avoid it if you dislike that aspect of the game. It's still a very, very good game played offline.

I was killing the mini-legions at the start for sharp stones, and then attempting to exit via 1-1's demon portal but found it blocked. Returned back to the first room and saw the hostile spirit and readied myself, only he went running down the pathway towards the first tower. He must have expected me to have killed the red dragon already since he made no effort to get away when it flew overhead and roasted him.
Since everyone has recommended a ton of retail games, here are some you should check out from the PSN:
Gripshift - It's a driving puzzle platformer. Sorta. It's hard to explain. Remember Hard Drivin'? It's like that, only more awesome.
echochrome - It's a puzzle game that uses perspective as a tool. You can create your own levels and upload them/download other people's created levels as well.
Super Rub a Dub - This game is like Marble Madness, except you're in a pool of water that you tilt using the Six Axis function of the controller. Instead of marbles you have a duck, who has to rescue little ducks from pits and windup sharks, among other things.
And even though it's not an exclusive, Burnout Paradise is $20 on the PSN and it's pretty rad, if you haven't played it yet.
