there are some kind of techniquey tricks to teasing out a creamy consistency on a more healthy sauce
one of them is letting the veggies cool and then tossing it with greek yogurt
industrial recipes will use, like, guar or caraneegan gum or, like, agar agar and gelatin and fiber gel and that kind of thing
