When I lived there (Yaletown) I liked walking over to Gastown. There's a great cocktail bar there called Pourhouse. I also liked Black Frog if you just want to relax with a beer and read a book or something. People always talked about how great shopping was on Robson, but it wasn't for me.
Go see Stanley Park. There are very few sunsets better than the ones you can see there, or from Sunset Beach. If you want to see a great view of Vancouver, drive up here: http://goo.gl/BfAfL
There's a lookout where you get a great view of the city, especially at sunset/dusk.
Just go for a walk around, in your Bruins Championship T-shirt.

I second Gastown. Stanley Park is obvious. Take a walk around the seawall. Visit the 9 O'Clock Gun.
If the cocktail lounge/bar scene is your thing there are a few very choice bars around downtown. Try Indigo at the Sheraton Wall Center, Opus in Yaletown, YEW at the Four Seasons.
Since you have a car, may I suggest The Cellar? Not the dance club, but the jazz lounge in the heart of Kitsilano. I'll be there Thursday night and I can guarantee that it's quite an establishment. Good food, great alcohol and fantastic music.

True. Don't be lured in by Granville, though! While the concentration of bars is high, they mostly aren't that great or memorable.
Except that one time that Eastern European guy with the track suit and leather fanny pack made friends with me in a cocktail bar there. He would only would talk about the women that were there and wanted to fist bump an inappropriate amount. That was pretty memorable.
The Granville Strip is more fun to walk along at night and peek in all the awesome vintage clothing stores and cool sports bars. Other than the Donnelly Group bars, though, which are hit or miss, there's way more variety outside of Granville Street.

Van is one of the best places I can imagine to visit for weeks on end. I didn't like living there very much, for a variety of reasons that shouldn't affect you at all.
