how much of the books does it actually cover and what differences have been made?

They didn't change anything major. There was just less imagery of people eating.

You should be just fine. There will be some minor characters that will be treated as if they were there the entire time, but didn't show up in the TV show. But there's a handy reference in the appendices.
Ummmm, I mean I guess you could but I'm not sure I would reccomend it.
Some of the less central book characters have been amalgamated or cut entirely from the first season of the show, and the books go a lot more in depth about the history of Westeros and stuff.
I am clearly biased here because I love the books so much but I don't think you would regret starting with the first one.
Granted, one would miss a lot by skipping any of the books. I think Book 1 took me approximately 30-40 hours of so of reading? And the show was 10 hours. But if you don't want to spend the extra cash on a book where you already know what happens, you should be alright. It's really just a personal choice, and either option is just fine.

so okay huzzah I have something to look forward to in these books
I would assume that if the show has a large enough following that the writers for the show would just try to write out the rest of the seasons themselves.
Honestly, the show is pretty damn faithful and thorough, there wouldn't be much of a problem with digging right into Clash after viewing the first season. You'd just be missing out on ~800 pages of amazing writing (and mouth-watering food descriptions).
You might end up a little confused because you'd have to identify characters by name instead of by face. Basically Theon is Robb's right-hand man dude, the guy who tossed that coin at the whore. That's the one that might trip you up.
And don't start wondering where Ros (that whore) is. She was invented wholecloth for the show.
He's got approximately four years left two write the next two books. I think he can do it.
Yes, I realize it's taken him a long time to get the series to where it is today, but he's got a lot of hopes up now, and I am hoping he's already got ideas for how he wants to finish the story.

I have this weird thing going on with Mieville, like any time I read one of his books I spend half the time exclaiming in annoyance at one thing or another, I can probably find something irritating on every page.

I've done the math. Assuming they split Storm and Dance into two seasons each (those two books being considerably larger than the rest), when Dance comes out in 20 days there will be enough material for 6 more seasons. 6 years is how much time there was between Feast and Dance coming out, and we've all heard about how the last two books should be smooth sailing now that GRRM is past that mid-story tangle (the infamous "Meereenese knot" he kept mentioning on his blog), so The Winds of Winter should definitely be out before then, adding another year for A Dream of Spring to come out (or two if Winds is another thick motherfucker). Any years less than 6 that Winds takes to come out is an extra one for Dream to be worked on. So assuming optimistically that Winds comes out in 3 years, that means that GRRM will have 4 or possibly 5 years to write Dream before the series catches up to him.
Should be fine. There's a possibility it might not, but it should be. At worst, HBO has pushed seasons back a year before.

And it's very faithful, I prefer the books because there's more to them but it's a great adaptation.

That stuff tends to be more background than anything, but it's still cool. I don't think they mentioned Howland Reed in the show.
