I've been on a bit of an acquiring-old-games kick; i just ordered The Last Express, Syberia, and Sanitarium from an ebay seller. I recently picked up and installed this Gabriel Knight game, as well.
I started it up, and I desperately want to make it text-only. I never want to hear Gabriel's voice again.
I had a lot of fun with Gabriel Knight 2 which is saying a lot considering how crappy the majority of FMV games were back then. I never played the third GK game though, mostly based on the sheer number of bad reviews it got.
Gabriel Knight 3, if you ignore the mustache puzzle, features one of the single best puzzles in any game ever. Gabriel Knight 2 is probably the greatest FMV-based title out there, but it's the weakest of the series.
Be wary, the Gabriel Knights feature a shit ton of real historical research and can take a long time to really get going. Stick with it though, Jane Jensen's writing is usually top-notch.
By the way, check eBay. You can probably get a copy of the first GK for under $20.
