Computer Build Parts Advice

Hey, it's time to stop being cheap and to build a new machine. I just wanted to run some things by you guys and see what you had to say. I prefer to just get it all on Newegg. I know I can go around to other places and mix and match for better deals, but I'd just rather it be centralized. I think right now, the thing I'm most unsure about is the motherboard.

Current plan:
I left out the SSD and the HDD and optical since I already have them. I decided to get a new PSU and case just so I can give my old machine to my parents.

Core:
Intel Core i7-2600K Sandy Bridge 3.4GHz (3.8GHz Turbo Boost) LGA 1155 95W Quad-Core Desktop Processor Intel HD Graphics 3000 ...
ASUS P8Z68-V LE LGA 1155 Intel Z68 HDMI SATA 6Gb/s USB 3.0 ATX Intel Motherboard with UEFI BIOS
G.SKILL Ripjaws Series 8GB (2 x 4GB) 240-Pin DDR3 SDRAM DDR3 1600 (PC3 12800) Desktop Memory Model F3-12800CL9D-8GBRL

Video - EVGA has treated me right when my 8800GTX went out this year after having it for 5 and they sent me a 460 GTX as the replacement. I also am concerned about some of the issues I've heard with ATI cards and overheating in swtor:
EVGA 01G-P3-1561-AR GeForce GTX 560 Ti FPB (Fermi) 1GB 256-bit GDDR5 PCI Express 2.0 x16 HDCP Ready SLI Support Video Card

PSU: I'm not really sure if it's worth the $40 more for a 'Gold' Psu. Also, today the Corsair ones are an additional 15% off on newegg so, I figured I'd try them.
CORSAIR Professional Series Gold AX750 (CMPSU-750AX) 750W ATX12V v2.31 / EPS12V v2.92 80 PLUS GOLD Certified Modular Active PFC Power Supply

Case:
Corsair Carbide Series 500R White Steel structure with molded ABS plastic accent pieces ATX Mid Tower Computer Case
It has bottom psu, cable management, USB 3 and I haven't read any reviews about the Front panel shorting anything out or fans making a ruckus in the reviews.

Let me know what you guys advise.
