OK, so I bought a $25 gift card for the iTunes store with the intention that I could use it to gift apps to my girlfriend's iPad. Lo and behold, apparently you can't use store credit for that! Thanks, Apple!
Anywho, is there any way I can use this credit? Can I give it to her somehow? Or if I buy apps with my iTunes account is there a way to put them on her iPad (which is synced with her account)?

I'm afraid there's nothing you can do at this point. Try contacting Apple explaining your predicament though. They're typically pretty good with helping out somehow.
