Barring that, check Radiant Raiment in Solitude.
It's hard to believe you haven't found any though; I am basically tripping over that shit most of the time.
I was only able to get through Oblivion by using the achievements as guideposts, otherwise I would become kind of paralyzed and just wander around that first town for a hundred hours breaking into houses before starting a new character.
So, for Skyrim, I generally like to play sneaky bow-type people that, well, steal things. Am I going to have difficulty completing things because I focus so much on the archery and stealth? Is there anything I should do immediately in order to make things easier on myself?

Archery and stealth are crazy overpowered together. You'll be fine.

Well, I've done a couple of bounty things that I found at the Bannered Mare in Whiterun and it seems like the moment I do anything, no matter how far away or how well hidden I am, everybody within a mile and a half knows my exact location.
Also, smithing/tanning/etc is addicting.

Guess I'll have to hit up the Brotherhood.

Unless you're doing any quest that puts allied NPCs at your side. In that case, you won't be able to execute sneak attacks - at all - since you're flagged as "detected" when they see you, and they WILL see you at all time, somehow. Even Shadowmere

What outfit is that that you're wearing under the cloak?
Ooh. Nice.
Are those pants a separate piece? Because good lord do I need to find some pants. So much promising armor ruined by nothing on below the waist. And the best I've found so far are shorts, which, while better, are still not quite ideal.
Argh.
I seriously don't get why tons of "armor" has individually pieced skirts, belts, shorts, and even panties.. but nobody has made a damn pair of pants for UNP.
You mean that isn't the point of these games?
Anyways, sneaky/archer is absolutely viable. I went with a pure archery character (sans sneak) and it played reasonably well; once I add sneak damage modifiers in, dungeons were caaaaaaaake. Dragons... not too, too bad.
If you can, try to train up blacksmith to give yourself access to a better bow early. That made a fair difference for me and I never even bothered enchanting them, so if you add that on top you should be mowing down your foes.

All right, people. It is not a gerbil. It is not a hamster. It is not a guinea pig. It is a death rabbit. Death. Rabbit. Say it with me, now.
Pretty much.
Personally, if they want to reduce the number of models in play even further to increase the number of people on screen in the next Elder Scrolls, I'd be fine with clothes/armor being part of the NPCs themselves, so it's only 1 model + weapons per actor... but then people would complain how there isn't a "realistic" 1:1 corelation to what people are using and what you can loot/steal from them.
..Of course now that they're introducing crossbows I'm going to end up relapsing.
and I need daggers a lot more than i did on my previous stealth game
the bow doesn't always do the job
and if a really tough guy gets alerted and charges me, there's a non-zero chance i won't be able to stop him
and there's a non-zero chance i'm dead in one hit
so i try to knife the biggest guy in the room if at all possible
time to go find that mod that makes bretons and elves look like they're not 65 year old chain-smokers

it's just the bretons and elves that bug me, since it's impossible to make a breton lady that looks younger than 40

Have you checked out this? Might be what you are after for mixin' and matchin' armour pieces.
Also, thanks @Dashui for adding Cloaks of Skyrim to the OP!
It started with me noticing a color sky I hadn't seen before, and I've played a lot of Skyrim. I've seen a lot of green auroras, but purple and blue? Never.
Then I found a nice little rock and thought, what if I started fucking with spells? It ended up being hard to stop. Here are a select few of the three dozen I uploaded (the rest are mostly me playing with different angles):
I didn't use photoshop on any of the screenshots, either. It's all ENB. I really like the reactive effect it adds when you zoom around bright light sources.
what mod are you using for your face meshes? i know that hair is apachii but i dont recognize the rest of it :O

I 'finished' the dark brotherhood and companions over the last couple of days, but neither of them have shown up as completed questlines in my statistics page. Is there extra stuff after the "final" quest that I have missed?
There are extra quests, and I think the guilds supply you with an endless number of minor quests, as well.
I think I saw a mod that splits nearly every armor in the game into torso and legs so you can mix and match as you see fit, but it only does it for the vanilla armors.
edit: and I like how my sneaky archer turned out, anti-gravity hair aside.
edit edit: ...and now I can't unsee the shadows giving her a uni-nostril.
Dark Brotherhood gives you two different kind of additional quests: One endless, one with four "stages", you should already know which one I mean if you finished the main plot.
The Thieves guild supplies you with seemingly "endless" side quests, but once you've done a certain ammount of quests in the four major holds, you'll get one special quest in each of them. Complete these in turn and you get the last quest that let's you restore the thieve's guild to its former glory!
