I love playing games with my girlfriend, since it's something we can both enjoy together for awhile. However, I really can't think of that many to try at the moment. We've had great success with Heroes of Might and Magic 3 and 5, but I can't really think of much else to try. I've thought of Civ 4, but that type of game never really appealed to me, and she seems to really enjoy the fantasy style games, so I'm hesitant to try a historical or sci-fi fare (though sci-fi would probably be better, so long as there's something she can
connect to).
Any suggestions would be great.

Do they still have stuff like that out there? Oh, what about the sneak about type games like Splinter Cell? Fun to watch the other play, and you can take turns on difficult to perform missions, etc. (creates fun competition when someone manages to make it through and lords it over the other) I used to do that with my brother quite a lot.
Age of Wonders 2. You can thank me later.
(Fantasy, similar to HoMM but with some Civ-like elements. Yes, it supports hotseat co-op.)
the "no true scotch man" fallacy.
Well, you've already got Heroes III, which was going to be my first suggestion, and I would emphatically not recommend the Master of Orion series, because its desiged to be played ten turns at a time as opposed to hotseat (and is quite a bit nerdy and not appealing to any girls I know at that).
So in addition to not recommending MOO (though I do love it), you might check out Wesnoth. It's a pretty good game, and I love the art style, but it's much simpler fair than Heroes III.
Heroes V is not a bad sequel at all, but it's basically like Heroes III in 3D (with some things related to flavor worse, and some things related to gameplay better) and is not strictly necessary. Also bad for hotseat, because it has a lot of slight delays between screens that slow play way down (at least on my MacBook Pro).
It's the second best thing coming from the Netherlands!
