Allergies

So, I feel like this is something I should know about, but I don't. Simply put, I am curious if it is possible to be allergic to canned tuna, but not fresh/sushi.

Long version is that I was very allergic to fish growing up. I couldn't even smell it or I'd start breaking out. Several years ago I finally started eating fish again with no problems. The other day, though, I tried some canned tuna, as I've heard it is supposed to be good for you. For the next hour or so I was basically itching all over. Happened the next time I had a can, as well. Could I be allergic to canned fish? What is different about it?

    Yes.
It has been "well documented" that many people (children) with "fish" allergy likely tolerate canned tuna (Bernhisel-Broadbent JACI 1992) and yet there are case reports of persons with tuna allergy who react to canned tuna (Kelso JACI 2003) and even a patient who reacted to canned tuna but not fresh tuna (Sero Allergy 1998).
