beet tops

I got some beats, I baked them. They had a bit of dirt in them, but they where yummy. I just baked them, then put butter/salt on them. Not to bad. Any other ways to eat them? (Am I suppose to de-skin them? It tried washing them before hand, but they where still dirty).

oh! My post here is about Beet tops though. I have a bunch left over from cooking beats (see above).

tops are also an excellent source of vitamin A. A comparison of the various nutrients found in beet root and beet tops shows that, on a per weight basis, the tops have a higher nutritional value that the roots.

So instead of throwing them out I'm going to eat them. Rhino is hungry. Rhino needs food.

That looks like a good option, right? What else can I do with them. I'm a novice cook and don't have much fancy stuff here... so don't suggest nothing to complex.

    Like the article says, they're a lot like swiss chard. Hence, you should be able to experiment with most any chard recipe as well. My wife makes a chard soup that's quite simple but tastes pretty good. google "chard soup" and you'll see a bunch of recipes. You could probably search for 'beet soup' as well and simply slice and throw the tops into those soups, too.

    Incidentally, most leafy green things like that work well in soups. It's just a matter of balancing it against other parts of the soup. So, if you do beet tops, don't add celery or chard.
