Getting rid of gmaps is another example of Apple's walled garden philosophy and that isn't one I support.
Part of my suspicion towards Apple products is that they do appear to have a penchant for weird platform bullshit. It's kind of funny that they have carried the whole "you are not in control of your device" theme the furthest when everyone thought it was going to be MS that did it. Though to be fair, they're starting to do the same kind of thing, what with killing third party Windows 8 start menu mods and such.
I'm pretty sure Weird Al was the first non-free concert I ever went to. Sadly I went to a lot of free jazz concerts when I was little or else it probably would've been my first concert ever.

Are there any third-party apps that are default apps in Android?
Lots of carriers add them to their roms, I've never touched a blank slate android install so I don't know for sure but every android phone I've gotten has had like, a twitter app by default and a bunch of other crap I didn't want or need.
Who are those freaks who don't have "tap to click" enabled, and why is not the default on every laptop made, ever?
I am one. Tap to click malfunctions constantly on me. I end up randomly clicking everything on screen. It is incredibly frustrating. I hate it so much.

I mean stuff that Android officially includes as a part of their functionality like Apple did with Google Maps for so long.

Maybe flash player would count? I don't think there's a lot of basic functionality stuff that google doesn't already actually have a version of that's as good if not better than the free competition to package into the rom.

I don't see how the "walled garden" has anything to do with this move either. It's just gonna take a little while for an official google maps app to work its way through the gates and then there you have it, a google maps application.

On a clean install? Nope but basically every phone other than the Nexus is going to have something because carriers/rom makers are free to do as they please.

Like Close, But No Cigar (probably NSFW) for Cake and Dare to be Stupid for Devo.

So it won't update any network settings because it thinks it has no connection but totally does.
