Nobody plays it online anymore, but Bionic Commando has LAN play, and as a multiplayer game there's nothing else quite like it.
Magicka, the game where every situation is one misplaced spell away from complete disaster, and that's all part of the fun. Not sure if it's LAN play or not though.
Medal of Honor: Allied Assault. I just re-installed this (and it surprisingly works). Had so much fun back in High School with it. Was one of my first real main games to play online.
My friends and I used to have LAN parties every few months. At first they started off as a day-thing, but then somehow they grew into full week-long sessions of insanity. Oh days of college...
Here are some of our favorites. We mostly played cooperative games... which may explain why we could stand each other for more than a weekend at a time.
Rainbow Six: Raven Shield
Our roots were in Rainbow Six: Rogue Spear, but we tried Vegas but felt really disappointed. Cooperative mode was always a blast and we would keep playing a mission until we won without a single casualty.
Ghost Recon
Also talking about the original series here. Add the Navy Seals mod or any mod to buff up the weapon selection and enjoy some very good cooperative sessions. Alternatively, the competitive modes were a lot of fun and unique. This was the first FPS game I've played where I could have more than 2 teams competing on a map.
Freelancer
We only played this over one weekend LAN, but oh boy did we play it into the ground... from space... with lasers...
Company of Heroes
I don't know why we chose this game over others since most of us didn't really like RTS games. Still, we'd do competitive and cooperative skirmishes. The AI was surprisingly competent in the latter... but maybe it wasn't and we're just bad at the game.
Worms Armageddon
We had problems running this one on our newer machines. Whenever a few of us got bored, we'd all play a quick game of Worms.

Age of Empires/Warcraft 2 are my favorite LAN party RTS games.
While Quake and Halflife get a lot of love for fragfests, I think Shadow Warrior (or Duke 3d in a pinch) should not be overlooked.
Plus it has the original Horde mode.
