Dave, the Wacom site has a support page with downloadable user manuals in PDF. I'm sure one of those has the explanation for what they all do. Just guessing from the vids I've watched in the past, but I think one of the buttons "turns off" the stylus allowing Gabe to use the stylus to drag the image around, and another zooms in and back out, and maybe one switches brushes?
EDIT-Gabe uploaded a real time version of the video and I think one of the buttons is a "undo last" button as I can see him draw a line then hit the button and it disappears and he draws it again.

In Photoshop, when you're using the Brush tool, clicking and dragging with the mouse (or tapping and dragging with a stylus in this case) creates a brush mark on screen. If you want to use the Hand tool to move the canvas around, you can hold Spacebar to temporarily switch to it, and then click and drag (or tap and drag w/ a stylus). I'm guessing one of the buttons Mike is pushing a lot is mapped to Spacebar.

These are fantastic! My wife is an elementary art teacher and would love to show one of these to her students as it brings together so many of the concepts that she has been teaching them all year. Watching the process from start to finish is a great way to show the students a professional artist's workflow and how it relates to everything she has taught them.
There is one small problem... the three that you have done so far would not fall under school aged appropriate material. Would it be possible to record one of these sessions with a comic that has a little more of a E rating?
