This is what I want.
This is my opinion about using Clark when using the game:
Short version: He will make you fall into a lot of bad habits and is not that great of a character (every character in kof is great, compressed tier list, blah blah, etc).
Long version: Clark is very easy to pick up and play due to the "priority" (lack of a better word) on his normals, jump CD and specials (especially his ex specials). Many players will abuse these rather than learning the basics. By basics I mean hops, movement, varying block strings in offense, using things other than mashed out reversals to anti-air/defend (normals, rolling, backdash, guard cancel roll, guard cancel backdash, in-air normals for anti-airs, etc).
Clark is the fuerte of kof. If you don't know how to play (and sometimes if you even know how to play) you will get destroyed by a decent clark. You will win by guessing though which... again... won't properly help you learn the game. Furthermore, you won't learn much by playing clark against a better player... the best players will keep you uncomfortable with your pressure and will be very good at mind games. This is pretty important, because it is my sincere opinion that starting the game with clark will make it very hard to develop these skills.
If you want to see what a good clark looks like, find some videos of Cassanova (he usually only goes to Canada Cup and CEO). He usually doesn't do too much stupid shit and is a good example of what a good Clark should look like.
By all means, if you're dead set on Clark, go ahead and put him on your team. But make sure you don't go on autopilot. Choose other characters that will teach you the kof fundamentals (i.e. andy, terry, shen, kyo, benimaru).

Saiki's light projectile is the best light projectile in the game. Problem is.. heplays unlike any other projectile character in the game. So if you learn him... you'll learn saiki but not necessarily how to optimally play projectile characters. Andy or kensou would be better in this regard.
Iori has great "kof fundamentals." However, my thoughts about him as a beginner character change depending on claw or flame. Both characters have access to deadly mixups, great movement and screen control, high damage, etc. In regards to which is a better beginner character... definitely claw. Easy damage... no projectile means you have to legitimately learn how to get in without using a projectile as a crutch. However, he's pretty one-dimensional since he only excels at rush down and sucks at everything else. You may find it hard to make it work at the start because of this limitation but the more I think about it, the more I think he's a great choice. Flame iori is much more versatile and there's a lot of disagreement about if he's good as a starter character. His high execution lends some people to say no.. but other people see that as a reason to make people play him. I know very very strong players who still drop lots of basic shit with flame iori. Its sort of like when Viscant tells beginners to learn Magneto in marvel.. if you learn how to get good with him.. you can probably tackle anything in marvel.
Ive said lots of times before that Terry is great for a beginner character. Easy combos.. teaches you how to use the ground projectile, great normals.
There's also a big element of... play who you like and learn the fundamentals along the way. I wouldn't call your team optimal for a beginner but its damn close.
