Not sure if it's too against the spirit of the thread, but the FFXV Stand By Me Cover started me down a path of listening to some original covers of existing songs I've liked in recent games.

Super Marcato Bros host a very thoughtful series delving into various video game music categories, and actually bring a bit of musical experience to the table. They're very diligent about crediting the specific composers of particular tracks as well, which I like. They also don't play more than necessary from each track, instead using their time to get to the meat of a song and how it contributes to the feel of a game.
Top Score is hosted by Emily Reese, and she conducts interviews with game composers. I especially recommend her interview with the composer for Ori and The Blind Forest. It's a bit shorter than most podcasts, but well worth it.

It's great because one of the brothers didn't play it, and the other hasn't finished it. They manage to pull some very surprising insights about certain characters and certain musical contexts, just based on qualities of the particular tracks. Even in direct contradiction to their own perceptions!
The brother who played it talks about not making it to the end, and thinks that Asgore is a big-bad Ganon-type villain, but when they're listening to the Asgore track, they remark on how it's final battle track that isn't very "dark".

Thanks again to @Didgeridoo for turning me on to Super Marcato Bros. I've been going through the archive picking out interesting looking episodes, and today I found out that one of the brothers created a Metroid tribute album.
Now, this isn't a remix album. This is an album of new compositions that thematically, instrumentally, and technically resemble metroid tracks. And they're very good.
