How much of ALL THIS OTHER SHIT do I need to pick up or is that good for awhile just playing with friends and family?
Technically none. Each pack just gets you more characters to choose from. Some packs are better then others but really just grab some window boxes that have some you think look neat. If you can grab the Frigost Expansion at 75%, I'd do that as it adds a new realm and new treasures but even that's not necessary, just fun.
I keep playing Roll For the Galaxy and failing miserably at it, scoring less than 20 points a game - I feel like I've missed some fundamental mechanic
I always want to play it again though, so that says something about the fun factor it offers even if you aren't succeeding
Though you probably already know you should always be looking at other people's play areas before assigning dice. Does a player have a lot of workers in the citizenry with no way to get money? Expect an explore. See a lot of of dice tied up as goods or on the construction zone? They'll probably pick ship or develop/settle.
I usually start with 1-3 cheap worlds for a bigger dice pool and a cheap reassign power. After the early game you'll want to focus on either a mass development/world strategy or shipping. Along the way you'll probably want a money engine better than the basic stock explore action. A number of developments give you a more money per die used or give you money while progressing toward/earning victory points at the same time.
I received my Kickstarter for Viceroy and I'm not sure there was much thinking going on with regards to shipping. You may also want to check out krosmaster.com; they have a free 3-d version of the boardgame you can download and plug your figures into and play. It gives you 4 figures for free plus give you the whole tutorial to learn the game from to see if you like it. You have to play against random online opponents but it's still pretty awesome for a free game.

Are you the one who ends the game, or someone else? Do you play an aggressive strategy (just get as many cheap things as possible into your tableau as quickly as possible), or do you go for a tile-efficient strategy (go for big tech/planets as often as possible)? Are you able to consistently roll high numbers of dice, or are you finding that your dice are often in the citizenry, or locked on tech/planets or as goods for multiple turns?
Other people are ending it, always. Usually I've got maybe 5 tiles to my name (total, so I've only built 1-3 by the time the game is over), with another 1-2 in my development area, and possibly a small handful of VP chips. I'm not sure about the dice problem - I don't think they linger in places for more than a turn or two, if I've got dice held up somewhere I feel like I try to aggressively hit the action(s) that will free those dice.
I can't say I've ever gone into a game with a strategy in mind - I'll pick the most synergistic sounding starting tableau but rarely feel like I grok particular synergies among the tiles beyond that, so I'll usually just pick whatever jives with the colors of dice I have.

Just played another scenario of Napoleonics with my friend, 2 more to go and we are done with the core box! Once again it was another nail biter of a finish, with the score being 6-5. I've already go a copy of the Austria expansion in my hot little hands and have begun to sticker it. And I've got the newest expansion that adds a new layer to the game with tactics cards and other wrinkles on P500.
I think it is safe to say that I am very, very hooked and very happy with the game.
I played C&C Napoleonics for the first time on Sunday and had an absolute blast (we got a bunch of rules wrong, but whatevs). So much fun.

Hmm. Handful of VPs, 3 dev/worlds beyond the starting board, around 20 pts... Sounds like you're going for expensive stuff right off the bat? That or your economic engine is just very inefficient compared to the other players. I assume that the game is ending due to someone completing the max tiles condition, and not "all the VP are gone" condition?
I would suggest trying to go for a "nothing but cheap tiles" strategy for a few games. When you explore, only set yourself up with 1 or 2 pt tiles, and ideally ones that give you more dice or make other tiles cheaper. You can probably fuel this kind of strategy with the $ generating explore action alone - rather than having to set up a goods/shipping economy which is a little slower. If you can happen to find a tile that gives you bonus $ on explore, or something similar, then all the better.
All you're trying to do is be the first person to hit the maximum tile cap, and to do that as quickly as possible. Ignore VP generation entirely - all you're looking for is cheap stuff to build, and things that give you more dice, more money, or cheaper building actions. Cool synergies are less important then just spamming the board with planets and tech.
Once you've done a couple of games this way, try for a mixed strategy: cheap planets that will give you goods to ship, and shipping dice. Once you can fairly consistently produce and ship, you should easily have enough money to buy larger cost planets and tech (which should focus on whatever you're lacking: either more explore, if you're finding your production can't keep up with your economy, or more money generating stuff, if it's the other way around).
...it's possible that the people you're playing with are just Roll Lords! Maybe ask to sit out one game and to spectate one of the stronger players to see what they're doing that you might be missing?

It's such a blast, right? It definitely took a couple tries for us to get all the rules right and also to have them really click. Once we really wrapped our heads around the interactions between infantry squares, cavalry overruns, cavalry withdrawals, taking ground and combined arms attacks the game really opened up. But once all the nuances of those rules sink in you can start doing some really fun stuff. In my last game I managed to roll an entire flank with crummy militia by first scaring the enemy into squares and then assaulting them in melee with artillery support. The game really captures the differences between artillery, cavalry and infantry and incentives using them in conjunction while still having very simple rules. Which is rad!
Oh crap, I think I found one of my problems. I'm watching Rahdo's RoFTG video and notice he keeps both tiles when he explores and abandons his existing colony - I've been treating it like RaFTG Explore, and only keeping a single tile (no matter how many I look at), which might explain why it feels like I can't seem to get develop/settle actions done regularly.

What I tell new players is this.
Easiest sanity check: scouting gives you +1 tile. If you had 2 tiles before, at end of it all you better have 3. If you don't, you didn't do it right, ask for help.
(Also, do each scout completely before doing the next.)
Once you get it it's no big deal at all, but it helps to figure it out first the long way.

I picked up Voyages of Marco Polo with my math trade credit instead of Specter Ops. I still may get Specter Ops, but Marco Polo has been getting great reviews, is more of a sure thing, and is done by the Tzolk'in designers, which is one of my favorite all time games!
I've played Marco Polo about 6 times since getting it a few weeks ago and it is fantastic. Let me know what you think once you get it!
I had heard a little about it here and there but I decided to take a deeper look at it yesterday and I'm glad I did. Watched the Dice Tower review of it and it just seems like something my girlfriend and I would enjoy! Simple but interesting mechanics, variable powers, and dice placement? I'm in.

Probably you didn't bring enough damage or your set-up got borked on the damage you brought. Gloomweaver isn't that dangerous as bosses go but those minions can be super-resilient and pretty dangerous if they get out of hand.

Do you like logic puzzles and lying to your friends? Similar to The Resistance (Avalon) above, ONUW is based on hidden traitor games like Mafia and the titular Werewolf. The catch is that where those games can take an hour and Resistance takes half that, ONUW is a mere 5 minutes. Everyone is given their role and then closes their eyes. Werewolves learn who the other werewolves are, and then a bunch of village clowns muddy the information up. While your eyes are closed your role might be swapped with someone else's, or you might be a seer who can see what someone else is, or many other roles who can cause chaos or create information in equal measure. Once your eyes are open the village has 5 minutes to vote out a werewolf, while werewolves seek to make sure that a perfectly innocent villager gets the blame. Now sometimes the game will end in 30 seconds, when someone goes "Wait, I'm a villager now? Oh okay awesome, that guy's a werewolf, we win!". But it takes another 30 seconds to just shuffle the roles back up and play again! An excellent light game to ease into an evening or laugh at over beers.

Don't make me come disintegrate your spaceships after beguiling them with my illusionists, dude. We are just as able to dispatch Mage Knights to space as anywhere else.

I'd say both of them. My main problem with the board game was that it was mostly solo, but Pirates & Bounty Hunters added a lot of interaction in my games. If you have a less cutthroat group you might be able to skip it, although I still like the ship and cards. Blue Sun is mostly just extra stuff, but I like extra stuff. The expanded reaver and alliance zones made it feel more dangerous to be in certain areas, not just juking around a single ship.

I wouldn't go that far, but Basic Gloomweaver is one of the easier villains. Perhaps time to re-examine how you are using Hero powers, possibly not letting them build off each other ? Very easy to do this in a multi-player game of SENTINELS if you have a table full of rugged individualists who refuse to coordinate.
