It's been driving me mental all weekend trying to remember what other video I've seen him in. It's the fast, under the breath "I don't know". I know for a fact I've heard it before with similar fast silly talking.
(FYI, I use Adblock, but have Escapist Greenlisted because I like Jim Sterling and Yahtzee enough to put up with advertisements.)
I think it's been a year since Jim left the escapist, right around when they dumped a lot of their content creators. I just remember going to their site and noting that there hadn't been any Jimquisition, LRR, or other updates for several weeks.

in this instance, they weren't trying to take his video down (though they've tried that before)
they were trying to claim ownership of the video to make money from ads
which really stuck in jim's craw because he takes a lot of pride in only getting money from his patreon and keeping his videos/podcasts/website/etc ad-free

This may or may not be because they had regular problems with paying the people producing that content. In one of their latest podcasts Paul from LoadingReadyRun took a couple swings with a wiffle ball bat at the escapist, basically pointing out that they kept failing to pay for content delivered, or changed the amount they'd pay for it, but he was also trying to keep it professional.

Well the dude seems to be doing really well for himself, good for him
(I never heard of him in his Escapist days)
but the dude was making two videos a week for them for years and he doesn't have the rights to any of that work
I don't know what they really expect to gain from this, considering no one has successfully managed to really screw him over in any indefinite manner.
You need only point to Digital Homicide's ongoing tantrum towards Jim to see where this sort of tactic leads.
