Downgrading iTunes

Well, I've decided to explore the idea of downgrading iTunes due to frequent crashing. I want to know:

-What I would be losing by downgrading
-What other issues may arise
-What version to pick and where to get it, should I go that route

For the record, I use an 8gig iPod nano and iTunes is not my player of choice when listening on my computer.

I had stability issues with the latest update, as well. I just rolled back to 7.0 and had no more problems. Didn't lose any functionality that I really give a shit about, either.

Ok, but how would I go about doing this?
Edit: I'm a Windows user, in case that didn't come across.

I just uninstalled the 7.1 in the control panel and got 7.0 from here.

First completely uninstall iTunes and delete everything related to it that isn't a media file. Then search google for iTunes 6 (or another version you want) download. Download the install file and install it, then when it comes up uncheck the "check for recent updates".
