Recording a Cell Phone Call?

No, this isn't about spying. I would like to conduct an interview with someone over the telephone and well, I don't really know how I can do this to get a relatively good quality sound sample as well as ensure that it is in a workable format for a video editor as I will be using this for a video documentary I am trying to compile. Anyway I can do this or should I just put my Mic right by the phone while we have a conversation?

Does it have to be a cell phone?
If you can do it on a landline there are fairly simple devices you can buy.

every person who doesn't like an acquired taste always seems to think everyone who likes it is faking it. it should be an official fallacy.

Does your phone have a headphone jack? You could go from it to the line in on your computer and record / listen form the pc.
