Playing a song and writing a song are two very different undertakings and comparing an original recording to other bands' interpretations of if is like comparing all the apple pies in town to an apple that just fell from a tree.
You can enjoy someone's particular cover version more, especially if it's in a genre you generally prefer, but "better" isn't a word that should even come into it

There's plenty of covers that have supplanted the originals. Some covers people don't even know are covers, because the original sucked or the cover was just that good.

There's examples of covers replacing the original from all periods of history. And the further back you go, the less the original matters.
This seems to assume that every original recording is written by the artist, when professional songwriters are a thing that exist?
If someone were to record an excellent cover of Bat Out of Hell, does Meat Loaf’s version remain unimpeachable even though he and the artist covering it are both just performing Jim Steibman’s written piece?
Admittedly the odds of anyone covering a Meat Loaf song better than Meat Loaf are virtually nonexistent, but still. Improving on a song is improving on a song, writing can and often should be classified separately from performing.
