Right. So, is it a mustard or a pudding?
but you can rent out the bus from spice world as an air bnb
can you drive it around too or does it have to remain stationary?
There's a place in DC. I can't remember what it's called but it's across from Hill Country Live

Incredible.
Wait, shit, I think we just reverse-engineered chilaquiles.
The only part remotely tasty is the yolk.
I have a rough time making them over easy though since flipping then is hard without breaking the yolk or overcooking it.
Also butter.
Or bacon grease.
Preferably both.
It's possible eggs just aren't to your taste. Otherwise, it's probably overcooking. Eggs are one of those foods that go from wonderful to absolutely repulsive when overcooked.
Try doing some scrambled eggs, and make sure to take them off the heat while they're still slightly wet, as they'll continue to cook from the residual heat. That should be a good litmus test as to whether the issue is taste or something else.
Have you tried sunny side up with a just a little bacon grease and a pinch of salt and pepper?
I don't like and of the over X eggs myself, I find it makes the whites have an unpleasant texture.
This morning I took a leftover beef hot link and diced it up, browned it in a skillet with some butter, then fried up two sunny side up eggs in the sausage grease/butter and then topped one of the bean and rice bowls with the sausage and eggs. Ridiculously delicious.
I ordered one again today, and I'm happy to report that it arrived hot and fresh and delicious. I am filled with the deep joy that only comes with slightly too much spicy fatty food on a rainy day, and go now to take a celebratory nap.
