MS Office Word 2003 problem... Can't type over selections. WTF?

I'm following my step-by-step classwork but my projects are complicated by an annoying behavior that I'm sure is an option somewhere and not simply a stuck key.

When I am instructed to select an object and insert an object, it just puts both objects into the document instead of replaceing one with another. If I highlight test and then type, my letters insert at the beginning or end of my highlighting instead of replacing the text I highlighted. When I change the format of a date opject, I get TWO dates even though I made the change in a dialog!

This is making everything take for-fucking-ever because many of these objects can't be "backspaced away" and sume don't respond to the delete key or can't be "cut" by normal means. So far I've had to come up with "creative" ways to eliminate them, but the added time and difficulty has gotten too much. I'm sure it's something simple to toggle off/on similar to pressing INS[ERT] for OVR[type]/INS[ert], but I'm unaware of what it is.

Edit: I've also noticed that sometimes I can "repeat" un-done actions that I never did/undid! IOW, if the last thing I did was press DEL[ete] to delete someting on the right of my insertion point, and then I decide to take a look at "the way things were" a few steps back, I should be able to just press CTRL+Y until I'm back where I left off. Instead, it will allow me to keep pressing CTRL+Y and things will just keep getting deleted until the rest of the page is gone leaving me to find out where the "real" final edit happened and "undo" to that point. GOD this is tedious.

    FIXED! Tools > Options > Edit tab > ALT + T > OK

    It was getting REALLY annoying with all the templates that say things like "Click here and type your name" which would just type a name next to the placeholder object.
