I just picked up an iPhone SE and am using it with Google fi. Just about everything is good except when I get a text message it looks like below:
iMessages are unaffected. I tried googling an answer but keep getting results for people receiving scam texts.

i also saw a Reddit thread suggesting it's something on their end, much older:

That was it. Turns out the solution was wait for the rest of my stuff to sync. Problem solved. Thanks!
