I don't have any albums by these guys (or any songs for that matter) but I am definitely planning on getting some. Basically what I'm asking any RHCP fan is: are there any albums that are just must haves? I know there was a greatest hits album released a few years back. Is that any good?

I have never heard an entire RHCP album that I liked. They're all (for the most part) pretty good, but it seems to be a trend of a handful of stand-out tracks and a bunch of above-average ones.
That being said, I was always more of a fan of their stuff from Californication on which is against the norm, it seems. I think they went more pop-ish (maybe?) since then. Otherside is a particularly nice song, if a bit meloncholy.
If you go to www.imeem.com and sign up for a free acount (fairly easy to do) you can listen to a bunch of their songs. Keep in mind I think this is legal (if it isn't, I haven't heard anything about it) as it's just streamed and can't be downloaded. That way you can sort of figure what songs you like and perhaps just hit up iTunes or whatnot.
Blood Sugar Sex Magic is a must have, I enjoy any and all the Frusciante albums.
Californication and Stadium Arcadium are very good.
By the Way has some really good songs on it, but I tend to forget it easily.
Even the chili peppers like to distance themselves from One Hot Minute. Allthough "my friends" is a good song, and I enjoy "pea"
I've never gotten into anything earlier than Mother's Milk, but do enjoy what I've heard of them. Anthony's voice really started to improve on Blood Sugar Sex Magic.

Also, If you have a chance to see them play live, do it! I can't reccomend it enough. Also for RHCP fans, check out Anthony's autobiography "Scar Tissue". It is a very entertaining and enlightening read.
Mother's Milk I said because its a good transition album and certainly more raw and punky which i prefer. If you like the radio top 40 hits more BSSM and the other two are good of course. And Minute sucked hard. They were lucky to make it through that one. Hard to go wrong with the band most of their albums are pretty damned good.

Blood Sugar Sex Magick and Californication are the best. Also, read Kiedis' biography, "Scar Tissue" if you haven't. I read it last week and it's really good. It gives a bunch of insight to them making the CDs and stuff.
Stadium Arcadium is meh in my opinion. If you get Californication you don't need Stadium because the tracks are just inferior versions of Californication's playlist which is itself a pretty flawless line-up.
Of course, if you only buy one RHCP album, then it absolutely positively has to be Blood Sugar Sex Magic.
I avoid anything post BSSM simply because they can't stop singing songs about California. They sound pretty but the themes are very tiresome and the melodies seem to run together after that album.

Yes, it is. I'm not a huge fan of the band, so the tracks on there are more than enough for me. You may want to go the full album route if you're into them, as I imagine a lot of good songs didn't make the GH record.
Depends what kind of music of theirs you like
Everything pre-John is punk/funk (so, Red Hot Chili Peppers, Freaky Styley and Uplift Mofo Party Plan)
John's early stuff is funk rock (Mother's Milk and Blood Sugar Sex Magik, One Hot Minute also fits into here)
New John stuff is kinda funky, but mainly mainstream rock (Californacation, By The Way and Stadium Arcadium)
I would recommend Uplift, BSSM and BTW, as they are my favorites from each era.
The Greatest Hits is excellent, since it has pretty much all the best stand-out songs from Californication, Blood Sugar Sex Magik and a few of their other albums. By the Way is one of my favourite Chili Peppers albums, but that's just a personal preference.
Stadium Arcadium is also very good, but I kind of think they could have done without half of the songs on there and just made a single disc.
Blood Sugar Sex Magik is possibly also worth it just for the song 'Sir Psycho Sexy'
I have to agree with Greatest Hits + Stadium Arcadium. I've always liked USA Today's review of Stadium Arcadium: "Enough great tracks to fill a lesser band's greatest hits album".
There are a few mediocre songs on Stadium Arcadium and not a lot of variety in their sound so things sometimes run together (I just happen to really like their style on the album). Greatest Hits gives a good variety of RHCP's music.
Still a little upset that they decided to play in Dallas - and my friends down here all went - about two weeks before I moved back here from IL.
If you like their funk then you have to get Mother's Milk/BSSM.
If you like their melodic stuff, get Stadium Arcadium/By the Way.

It lacks a couple key songs (mostly due to marketing issues) like The Zephyr Song, Around the World, Can't Stop, and a few others on the By the Way and Californication.
Red Hot Chili Peppers really depend of the era you like. Their sound has been evolving for so many years that you have a lot to sample from, like their early career stuff such as; Organic Anti-Beat Box Band, Catholic School Girls Rule; to their stuff like Californication, By the Way, The Zephyr Song; to their recent things like Dani California, Hump de Bump. Red Hot Chili Peppers really differ from album to album.
I also whole-heartedly recommend Anthony Kiedis' "Scar Tissue". It's pretty entertaining, at least for the early chapters.

Scar Tissue is great, but so so so so depressing. I read it last week on a bus trip and couldn't put it down.

By far my favorite album.
Not only is it their best album, but it is one of the best albums of that style ever.
I would suggest Californication as a 2nd album to listen too.
