Cooking with wine

I bought a bottle of Merlot to try and I'm not really enjoying it. What are some things I could cook with this or other wines?

    Really simple pasta sauce.

    Cut up a couple of tomatoes and whatever other vegetables take your fancy (zucchini, capsicum, mushrooms and eggplant are all good).
    Pour a little wine (probably about a glass) into a frying pan, throw in the veggies and cook at high heat, with stirring, for about ten minutes.
    Season with salt, pepper and basil. Sundried tomatoes are also a nice addition.
    Serve with pasta and cheese.

    Delicious!

    Red wine, when used for cooking, is essentially a very light red vinegar. I will second basically any recipe with tomatos, especially pasta-based.

    Kind of an aside, if you are just starting to drink wine, you'd be better off starting with whites and moving to light reds. Merlot is not a good starter wine for most people.
